(modern Tell Mardikh, Syria), a thriving Bronze Age city-state, stands as a cradle of olive cultivation and trade. According to cuneiform tablets dating to 2400–2300 BCE, Ebla exported approximately 700 tons of olive oil annually, marking the earliest known large-scale production and trade of this commodity. Initially, olives were harvested from wild groves; however, this period likely witnessed the advent of systematic olive cultivation. Olive oil held immense value, being ten times more expensive than wine and double the price of sesame oil. Its applications extended beyond culinary uses to include lighting fuel, medicinal purposes, perfumes, textiles, and even metallurgy, where it facilitated higher temperatures in metalworking.Ebla's prosperity was rooted in its fertile agricultural hinterland, which produced barley, wheat, olives, figs, grapes, pomegranates, and flax, alongside livestock such as cattle, sheep, goats, and pigs.
